During this process, the starch of the tapioca undergoes an enzymatic process to break the long-chain carbohydrates into smaller polymers as a form of pre-digestion. The resulting polymers remain complex in nature and are metabolized at a slower digestion rate as compared to simple sugars like Dextrose, offering a time-sustained energy source that can be optimized in post-workout recovery nutrition or meal replacement formulas. Maltodextrin is virtually flavorless and dissolves readily into any liquid.
