Ideal for a quick bite or a post-workout treat, they deliver that pumpkin flavor you love, minus the junk.
Directions:
- Mix Ingredients: In a mixing bowl, combine the almond flour, pumpkin puree, maple syrup, almond butter, Paleo Pro Aztec Vanilla Protein Powder, (we used vanilla but feel free to use any of our flavors!) vanilla extract, cinnamon, pumpkin pie spice, and salt. Stir until the mixture is well combined.
- Form Balls: Scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the balls on a parchment-lined baking sheet or plate.
- Chill: Refrigerate the energy balls for at least 30 minutes to set.
- Store: Once set, transfer the energy balls to an airtight container. They can be stored in the refrigerator for up to a week or in the freezer for longer storage.
